Boquerones: The Little Fish With The Big Mouths
As far as tapas go, you’d be hard-pressed to find more of a mainstay than this. Boquerones are fresh anchovy fillets covered in salt and marinated for anywhere between a few hours and a few days in sherry or white wine vinegar (sometimes with olive oil and/or bay leaf as well), and seasoned with garlic, parsley, and lemon.
